BRUNCH. What's not to like? In between our busy schedules, brunch has evolved into more than just enjoying (or piling up altogether) breakfast and lunch for convenience. Rather, a celebrated experience to press that pause button and restart before kicking off the rest of the day. This realization brought us to come up with AM Service at Acta Brasserie.
Collaboration is the grand design of this program. It should enable us to connect and work with our fellow friends whose passion aligns with ours (because where does the bigger joy come from?). With three successful series so far, we happened to have gathered positive responses from our customers. What started simply because of our love for brunch, turns out to have served greater purposes. And if our guesses are correct, we'll probably see AM Service every now and then, striving in the journey to reach the pinnacle of brunch culture, one collaboration at a time.
An epicenter of culinary exploration.
Before merged and became a thing, breakfast and lunch had very distinct traits (at least at the back of our minds). Take simple ingredients as an example. Eggs: scrambled for breakfast, sunny-side up as a side for lunch. Chicken: shredded on top of porridge for breakfast, grilled or sautéed for lunch. You get the idea. Now with brunch, we started to create a midpoint to trick the mind into thinking, “this is definitely breakfast, but lunch would also do!”
This purpose was strongly carried out in the series where we collaborated with BRAUD. The Bali-based artisan bakery has been one of the pioneers to build the brunch culture, through—we believe—their endless menu explorations. For the third series of AM Service, we are humbled to have BRAUD's Head Chef Brian Suliyanto to bring the scratch-made Duck Sausage & Fries and OG Glazed Donut Sandwich on the table; while their Pastry Chef Khezia Hakim tapped into the past and future with Kopyor Soft Serve. For brunch! Who would've thought?

A hub for hosting, the truest essence of hospitality.
Another important thing we can't miss other than the what is definitely the how. Truth be told, no matter how great the menu, food is just food. What makes food even more special is someone to share them with. The idea of sitting down, sharing plates and memories with friends and family goes beyond the meal itself. On AM Service, collaborators do more than just bake or cook. They are hosts who make everyone feel right at home even when they’re far from their own.
That’s exactly what we love about our series with Olivia Sumichan. Starting from an online business, the passionate baker has built a tight-knit community around her delicious treats. What started as a hobby (like making those most-loved Tape Crackers and Burnt Basque Cheesecakes) has turned into proof of how food can bring people closer. During the pop-up, we’ve witnessed how she brought her people together. Friends and family showed up not just for the sweets, but also to support her and have a good time.

A bridge that connects two different states.
We mean it both figuratively and literally. The thing is, we’ve discovered so many establishments on our FYP doing their unique things and creating cool menu, but shoot, they’re so far away from where we live. So we put them on our must-try list, though we don’t know when or if we’ll ever visit. For those who have a knack for culinary, this is such a bummer. AM Service answers to that.
Our vision came to life when Seroja Bake said yes to collab with us. Bandung is so blessed to have Seroja Bake with their extraordinary baked goods. They go with a tagline: bakery with a mission. What in the world was that? And so we thought, bringing a slice of their creations for a two-day pop-up at ours might allow us to learn from them. Despite the long-distance coordination, they didn’t disappoint for sure. Nothing went to waste. Even better, the crowds (and us, too) got to taste their innovative creations without leaving the town. Nice.
Three series, three collaborators. The best part is, this won’t stop here. In fact, we’re just getting started! Look forward to it as AM Service is at your service.
